Conduct a Hazard Analysis
We identify and evaluate any biological, chemical and/or physical hazards associated with your product which can be present in ingredients, equipment, storage and other conditions.

Identify Critical Control Points
Each significant hazard identified in the Hazard Analysis above will need a control to reduce (to an acceptable level), prevent, or eliminate the risk.

Establish Critical Limits
A critical limit is a scientifically specific value or value range, such as a temperature or the amount of time needed for the Critical Control Point to effectively manage food risks.
PRINCIPLE 4
Monitor Critical Control Points
Implement a process to ensure every single food item you produce is within control and documented. We accomplish this by developing monitoring and verification procedures.
PRINCIPLE 5
Establish Corrective Actions
Corrective Actions should assist in determining the root cause of the issue and address what happens if something goes wrong including outcomes and documentation.
PRINCIPLE 6
Set up Verification Procedures
This ensures monitoring procedures are scientifically validated and working as intended, such as calibrating thermometers or observing an operator performing the procedures correctly, etc.

Implement Recordkeeping
Both supporting documents and operational records are required to comply with federal regulations. Keeping (and storing) accurate daily records mitigates risk.
